Abstract

Food Processing Premise is a place for processing food raw ingredients to become ready to consume food. In order to function optimally, the premises are needed to be controlled frequently particularly in the port area where many visitors and staffs are in needs of health protection during their activities in this area.  For this purpose, the authority has been attempting to increase and maintain food and baverage quality in this area therefore it could avoid any public health menaces from food contamination and intoxication for the population. As basic health survey (RISKESDAS) in 2013 reported diseases contributed as public health threats such as diarrhea 3.5%, typhoid 2.2%, hepatitis 1.2% (Riskesdas, 2013). The study aims to analyse the hygiene and sanitation implementation of food processing center in Gudang 100 warehouse at Tanjung Perak Sea Port of Surabaya. This present study is an observational study with cross sectional design. The sample was obtained based on 2017 data and mapping of 60 food tenant premises. 5 places were observed during study period. The variables observed were including of location, building, sanitation facilities, dining room, food storage, ingredients, food, the process, serving, food stuff, and the employee. The variables were observed using the total score as enacted by Indonesian Ministry of Health regulation NO.1098/MENKES/SK/VII/2003 regarding of Hygiene and sanitation standards for food stalls and restaurant. The result of the study shows there are 2 food stalls (B and C) with score <700 while the other stalls (A, D and E) reach score >700. The conclusion of this study highlights the needs of adjusting the requirement of the hygiene and sanitation of food stalls and restaurant as well as provide regular trainings for food handlers.

Abstract

Dengue hemorrhagic fever (DHF) is an endemic diseases in Indonesia. Incidence rates of the disease in Surabaya is reported as the highest for decades including of the area within Tenggilis Community Health Center. In the last five years, there were 273 new DHF cases notified. As the prevention for this detrimental menace, the government implemented breeding sites eradication program. This research aims to find out the association of breeding sites eradication program of covering, cleaning, burying, larvaciding, bed nets,  (3M Plus) and  its association with the existence of Aedes aegypti  larvae index and the incidence of DHF in 2017. This research  uses case control study design with The sample group was all the households in the work area of Tenggilis community health care whose family member diagnosed with. Case group diagnosis were confirmed and recorded at the Tenggilis Community Heath Care during period of April - May 2017 with total of 11 cases. The comparison group was taken using purposive sampling method within 100 meters of the observed objects’ residences. The Result of fisher exact test of knowledge level about PSN showed significant positive association with p-value: 0,009. While insignificant association was reported by variable of attitude level, action level, larvae index with p-value 1,000, 0,361. and 0,387. It can be summarized that knowledge and behavior has a significant association with the incidence of DHF in 2017 in the area of Tenggilis Community Health Center (Puskesmas). However, the existence of larva has insignificant association with the incidence of dengue in 2017 in the Tenggilis Community Health Center (Puskesmas Tenggilis) Surabaya. Community empowerment is considered as alternative approach to improve community behavior in breeding sites eradication.

Abstract

Food security is an important aspect to produce quality food that is feasible and safe for consumption by general population. Good Manufacturing Product (CPPB) is a guideline in assuring food security adhered in food production process starting from raw materials to storage system. Tofu is highlyIndonesia and it is a product with a short storability or shelf life. Among other protein sources in food, tofu had a greater consumption value of 0.157 kg/ capita/ week in 2017(Badan Pusat Statistik, 2017). The tofu producers include IRT  Jombang. The purpose of this study is to analyze the hygiene of food handlers and environmental sanitation based on Peraturan Kepala BPOM RI 2012 about CPPB conducted in IRT  Jombang. This research used qualitative research, observational research, and used data collection techniques such as interviews and observations. Interviews were conducted on food handlers and IRT owners while observations were made using an observation sheets. Tofu and clean water were sampled and tested in the laboratory. The results obtained were lack of food handlers hygiene and environmental sanitation. While for laboratory tests on tofu obtained negative results Salmonella sp. and Staphylococcus aureus, and exceeded the maximum limit of Coliform Total and Total Plate Numbers (ALT). Laboratory test results for chemical quality of tofu were negative in formalin and borax. It is recommended to improve monitoring and supervision system of food handlers’ hygiene and environmental sanitation in the production environment of tofu home industries

Abstract

Physical sanitation of the house and parent’s behavior are the factors that could affect the incidence of ARI in children under five. The aim of this research was to analyze what factors of house physical sanitation that affect the occurrence of ARI among children under five in East Kalianget Village. This research was an observational research, with cross sectional design. The samples in this research were 60 children under fives randomly chosen through simple random sampling. Data collection was done through interview, observation, thermohygrometer, roll meter, lux meter, and EPAM 5000. Data was analyzed using chi-square and binary logistic regression analysis. The results showed that children under five’s bedroom density (p=0.241) was affecting the occurrence of ARI among children under five, meanwhile ventilation area (p=0.241), air temperature (p=0.948), humidity (p=0.830), and lighting (0.393) were not affecting the occurrence of ARI among children under five. Communities of East Kalianget Village that have unsuitable occupancy density are suggested to reset the number of their bedroom’s occupants, for example maybe a father sleeping in the living room to prevent the occurrence of ARI among children under five.

Abstract

Sunan Ampel Religion Tourism area Surabaya is one of the most visited destinations for visitors and tourists that is surrounded by food traders carts, unfortunately food hygiene and sanitation practice among them is still poorly implemented that it could initiates food borne disease transmission. This study aims to analyze the personal hygiene conditions of food handlers, sanitation of merchant facilities and quality of feeders in the Sunan Ampel Religious Tourism Area, Surabaya. This research is a descriptive observational study with cross sectional design. The population in this study were 30 penyetan food traders and food samples in the form of sambal (chili paste) penyetan to be observed for the presence or absence of E. coli bacteria. The results of the study showed that the penyetan food handlers in the Sunan Ampel religious tourism area were at at age group of 20-25 years old for 14 subjects (46.67%). The subject respondents in majority are men with total of 21 subjects (70%). The education level of the respondents is high school for 10 respondents (33.33%). The highest proportion of work period is 1-5 years is for 14 respondents (46.66%). Overall, hygiene condition of the food handlers is 100% in high category. Sanitation conditions for food merchant facilities that meet the requirements are 28 stalls (93.33%). Laboratory test results found 2 samples of chili paste positive with E. Coli bacteria. This study concludes that the hygiene condition of food handlers in the Sunan Ampel Religious Tourism Area was nearly in accordance with hygiene and sanitation standard, however, further practice monitoring is required as respondents frequently did not use aprons, used jewelry and smoking while working. therefore, a risk of food contamination is still a significant threat of the area. The result of the sanitation assessment of public facilities within the area showed that 70% of them have been met with the requirement.

Abstract

Hazard Analysis Critical Control Point (HACCP) is a system of quality assurance and food safety in preventing the emergence of problems ranging from materials, processes, and products. HACCP is a form of risk management system that is developed to ensure food safety with a preventive approach. This system is adopted to provide food safety assurance in food production process for consumers. The in-flight catering company service observed in this study is PT. Aerofood ACS Surabaya. The implementation of HACCP system in every production process has been applied by this company. However, there is still limited study to explore the implementation of the system in the company and identify any potential impediment of the system. This research is descriptive with observation method on production process of chicken oyster sauce menu. The control points used in the process of chicken oyster sauce production is by controlling the temperature upon receiving raw materials, storage system, cooking process, blast chilling, until portioning. One out of the ten of HACCP implementation stages, monitoring activity was found has not met SNI 01-4852-1998 requirement standard. Monitoring process was not implemented while checking the core temperature of the food during the cooking process. Nine other of HACCP implementations stages including of HACCP team formation, product description, drafting flow chart, hazard identification, critical conrol point determination, critical boundary determination, correction action, verification, and documentation were already in accordance with SNI requirement standard.

Abstract

Aviation is the most significant part of Indonesian Air Force duty. Air Force’s aircraft takes a role not only as Indonesian army agency transportation vehicle but also crucial for Indonesian air territory security protection. However the level of noises resulted from Air Force aviation operation activity such as take off of aircraft reached 130 dBA, so the operation can causes auditory and non auditory adverse effects such as communication, physiological disorder, and psycological disorder. The aim of this study  is to analyze factors induced to the hearing loss and analyze the effects of aircraft noises to technician health complaints. This research using case control approach and it was conducted by recruiting subject respondents group randomly of 20 officers includes of 10 technician as study group and 10 non technician as control group. The measurement of aircraft noise level was performed 4 times during 8 hours used Sound Level Meter. The results of aircraft noise measurement in flightline area was exceeding the threshold value of 95,56 dBA. The results of the study shows that aircraft noise significantly associated with to technician hearing loss p-value=0,026 (Spearman correlation test, p<0,05). Other factors that are associated significantly with technician hearing loss include aged p-value=0,023 (Pearson correlation test,  p<0,05). Insignificant association is showed for work period with p-value=0,038 (spearman correlation test, p<0,05). In addition, the aircraft noise is associated to health complaint as psychological disorder p-value=0,033 (simple logistic regression test, p-value <0,05). The conclusion of research is that aircraft activities affected hearing loss and technician psychological disorder.

Abstract

In 2017, Surabaya District Health Office reported an increasing number of new cases of pulmonary tuberculosis in the working region of of East Perak Surabaya Public Health Center (Puskesmas) and was reported as the highest rates of tuberculosis cases in Surabaya. Pulmonary tuberculosis can be transmitted through ambient air contamination initiated by the presence of Mycobacterium tuberculosis. This study aims to determine the association of physical environmental factors (temperature, humidity, lighting, ventilations’ size, floor materials, walls, ceilings, and density) in the presence of Mycobacterium tuberculosis in the air. This research is an observational analytic study with case control study design. The study sample consisted of 21 households/realtives of patients diagnosed with Pulmonary TB positive. The data was obtained from completed questionnaires by respondents, direct observation and laboratory examination of the presence of Mycobacterium tuberculosis in the air. Data analysis was conducted by Chi-square test supported by Fisher's Exact Test test. The results showed that the significant association between physical environment variables of temperature variables (p-value= 0,000), humidity (p-value= 0,000), lighting (p = 0,000), with the existence of mycobacterium tuberculosis inside of the room. While insignificant association was detected for the variables of ventilation (p = 0.397), floor materials (p = 0.229), the walls materials (p = 0.338), the ceiling condition (p = 0.331), and the dwellers density (p = 0.611), with the presence of Mycobacterium tuberculosis in the air of the common room this current study concludes that there is a significant association between temperature, humidity, and illumination with the presence of Mycobacterium tuberculosis in ambient of common room. Transmission of tuberculosis can be eliminated by using face masks, Despite the previous satisfied level of knowledge, the family behavior and practices when in contact with patients were insufficient to prevent pulmonary TB transmission.

Abstract

Food product requirements before distribution to consumers are including of the proper food labeling, and zero count of Eschericia coli bacteria. This study aims to identify the labeling process  and bacteriological examination (Eschericia coli) on javanese peanut dressing sauce (sambel pecel) product in Madiun city. The research is an observational research whereas data is analyzeddescriptively by cross sectional study design. This study used observations andinterview in obtaining data regarding the completeness of labeling. bacteriological examination (Eschericia coli) was performed by Environmental Health Laboratory of Health Polytechnic of Ministry of Health Surabaya for the total sample of 15 sambel pecel products. All of sambel pecel products in Madiun are without a complete label andwere inconsistent with the standards of the Governmental Regulations of food label and advertisement regulation.Each product is required to implement eleven label component such as product name, composition, net weight, expiration date, name and address of producer, label of halal, and consument information for disability occurs. Five out of 15 products were positively contain Eschericia coli bacteria while the products based on regulation about food, that it must be 0 (zero). Thus it can be suggested for Trade and Industry Service of Madiun toimplement stringent selection and monitoring process before distribute the product to general population.

Abstract

Dental erosion potentially occurs in swimmer due to exposure to chlorine substances.The purpose of this research was to analyzed level of pH and behaviors related to incidence of dental erosion in swimmers. This research was analytical research with cross sectional design. The research undertaken in KONI Surabaya swimming pool with 33 samples. The process of data retrieval is done by filling questioner and dental examination by dentist. The variable of research was dental erosion, level of pH, swimming frequency, swimming duration, and time being swimmers. The results showed that the variables that have correlation with the incidence of dental erosion were time being swimmers (p = 0,050) and swimming frequency (p=0,032). Athletes can consume water or vegetable after do swim to reduce the acid levels in mouth because water and vegetable can neutralize the acid. In addition, athletes are advised to visit the dentist to get more benefits associated with dental erosion.
